Steps

  1. Heat oil in a large skillet over medium-high heat. Add garlic and cook until fragrant, then add the ground chicken.
    Break it up and brown well. Cook until mostly white.
  2. Add curry paste, curry powder, and soy sauce. Cook for 1-2 minutes.
  3. Add chicken stock and bring to a simmer. Reduce heat to medium and simmer briefly.
  4. Add noodle cakes, pressing them into the liquid.
    Simmer 1 minute, flip, simmer another minute.
  5. Add coconut milk, peanut butter, and vinegar to the center of the pan.
    Stir until fully combined and uniform in color.
  6. Add spinach gradually, letting it wilt down.
    Watch sauce thickness and prevent burning. Remove from heat when desired consistency is reached.
  7. Add optional toppings.

Notes

This is one of my favorite go-to meals. It’s hearty, flavorful, and surprisingly impressive for a one-pan dish.

Modifications

  • The recipe is changed to be more meal prep friendly and instructions are simplified.
  • Uses an entire pound of ground chicken instead of 7 ounces (an awkward amount to purchase).
  • Additional stock makes it easier to control the end thickness of the sauce and prevents burning.
  • I add a lot more spinach. It adds volume to the dish without overpowering the flavor.
  • I also like to add potato chips on top for extra crunch and saltiness. Lays, Doritos, or Sun Chips all work well for this.
